Tomorrow, Muslims around the world will celebrate the beginning of Ramadan, the 9th month of the Islamic calendar, which is considered a special month. It is a period for spiritual reflection and Muslims are encouraged to increase acts of good deeds, often donating money to charity, feeding the hungry, and giving back to their communities. For 30 days, Muslims fast and abstain from food and water from dawn to dusk and usually break their daily fasts by eating dates, which are sweet and nutritious, and provide an instant glucose boost. So, greet your Muslim friends this month with “Ramadan Kareem” (have a generous Ramadan), and offer them a date at sunset. Ramadan Kareem!

RECIPE OF THE WEEK

Stuffed Dates with Almond Paste Filling,
From the kitchen of Meisam Bagheri

Stuffed dates are traditionally served during Ramadan and special occasions.
Orange flower water and cinnamon are used to flavor the almond paste filling. If you prefer, you can replace the orange flower water with lemon zest. Garnish the stuffed dates as desired with granulated sugar, walnut pieces or even a little shredded coconut.
Ingredients

·        1 pound/500 grams dates

·        1 heaping cup/150 grams of almonds

·        1/4 cup/60 grams sugar

·        1 1/2 tablespoons orange flower water

·        1 tablespoon butter (melted)

·        1/4 teaspoon cinnamon

·        Optional:

·        a few drops food color

·        Garnish: granulated sugar

·        Garnish: walnut pieces

·        1 tablespoon olive oil

Instructions

1.     Gather the ingredients.

2.     Blanch and peel the almonds.

3.     Bring some water to a boil in a small pot.

4.     Add the almonds and leave to boil for one or two minutes.

5.     Remove the almonds from the heat and drain.

6.     While the almonds are still warm, remove the skin by pinching individual almonds between your forefinger and thumb.

7.     Leave the skinned almonds to cool.

8.     Make the almond paste.

9.     Process the almonds, sugar, and cinnamon in a food processor until the almonds are a powdery mixture that is moist enough to pack.

10. Add the butter and orange flower water and continue processing until a smooth paste forms around the blade.

11. Remove the paste from the processor and if desired, divide and color the paste by kneading a drop or two of food color into each portion.

12. Stuff the dates.

13. Roll small cylinders of almond paste the same length as your dates, but only about 1/3 the diameter.

14. Take a date, make a vertical cut deep enough to remove the pit, but not so deep as to cut the date in half.

15. Discard the pit, insert a cylinder of almond paste, and press the sides of the date firmly around the paste, while leaving a portion of paste exposed.

16. Repeat with the remaining dates and almond paste.

  I have received a COVID vaccine. Do I need to continue testing?

Yes. Vaccinated individuals are required to continue ongoing testing as directed by Occupational Medicine. Experts are still working to learn more about the protection that COVID-19 vaccines provide, and everyone who receives a vaccine should maintain precautions such as wearing a face covering, physical distancing, handwashing, and avoiding travel and gatherings.

The college updated the COVID testing frequency for employees working on-site as of January 2021. Each employee is now categorized as either Lone Pine or Big Green testers, each with their own testing frequency.
