Thanks to the Outdoor Programs Office, the Dartmouth Green is the home of two ice skating rinks this year! Skates may be borrowed for free by students approved to be on campus, and Dartmouth faculty and staff with a Dartmouth ID card.Don't want to skate? Heaters, fire pits, and Adirondack chairs will be set up for you to hang out! Hours and locations.

Homemade Snow Cones

Ingredients

  • 3/4 cup sugar
  • 3/4 cup water
  • 1 packet (0.16 oz) Kool Aid
  • Ice
Instructions
  • In a medium pan, combine sugar and water, bring to a boil, stirring occasionally
  • Reduce heat and let simmer 3 minutes
  • Remove from heat and sprinkle Kool Aid packet in - be sure to sprinkle and not dump, it will combine better
  • Stir for 1-2 minutes to dissolve completely
  • Using a funnel, VERY carefully pour the syrup into a bottle - depending on the size of the bottle, you made need 2 batches to fill the bottle
  • Place in fridge to chill

Lentil Soup
From the kitchen of Aniko Fejes-TothIngredients
  • 2 medium carrots
  • 1 medium yellow onion
  • 4 cloves garlic
  • 2 cups dried red lentils (about 1 pound)
  • 3 tablespoons olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1/2 teaspoon kosher salt 1
  • (15-ounce) can tomato sauce
  • 6 cups low-sodium chicken or vegetable broth
  • 5 cups baby spinach (about 5 ounces)
Instructions
  • Peel and dice 2 medium carrots and 1 medium yellow onion. Mince 4 cloves garlic.
  • Place 2 cups dried red lentils (about 1 pound) in a fine-mesh strainer. Pick through the lentils, discarding any broken or discolored ones. Rinse under cool water until the water runs clear, about 1 minute. Set aside to drain while you cook the vegetables.
  • Heat 3 tablespoons olive oil in a large pot or Dutch oven over medium-high heat until shimmering. Add the carrots and onion and sauté until softened, about 5 minutes. Add the garlic, 1 tablespoon curry powder, 1 teaspoon ground cumin, 1 teaspoon dried thyme, and 1/2 teaspoon kosher salt. Cook until fragrant, about 1 minute.
  • Add the lentils, 1 (15-ounce) can tomato sauce, and 6 cups broth, stir to combine, and bring to a simmer. Cover and reduce the heat to maintain a gentle simmer. Cook, stirring occasionally until the lentils are tender, 18 to 22 minutes.
  • Remove from the heat and stir in 5 cups spinach until wilted. Serve immediately.
PET OF THE WEEK
Halpern lab post-doc Cagney Coomer's new puppy’s name is Bagheera (BA-gear-rha). He is named after the panther from The Jungle Book. Bagheera is an American bull dog and pit bull mix. He was born Nov. 28th. He’s very cuddly and thinks he’s a lap dog. He’s not a fan of the snow, but Cagney is hoping to sway him and show him what amazing fun it can be!
