A sign that there may eventually be an end to winter are the rows of buckets hanging from maple trees, challenging them to contribute their sap \u2013 yes, it is sugaring season again!\u00a0 It is also International Women\u2019s Day<\/a> today, which has been observed globally since the early 1900\u2019s as a day to celebrate the achievements of women and promote gender equality. Lighter Than Fancy - Spencer Lewis<\/strong><\/p>\n

After you draw off a batch of maple syrup, there is a process to determine its grade. After being filtered, it goes into an empty test jar belonging to a test kit containing 3 other jars filled with different shades of an amber colored liquid, each one representing the other grades: Fancy, Light Amber, Dark Amber and B. When the syrup in the test jar is lighter than the jar that reads fancy, then of course it's Lighter Than Fancy.<\/p>\n<\/div>\n<\/td>\n<\/tr>\n
